Demmler's Sunday cake: Juicy carrot cake

You've got a visitor coming at short notice this afternoon? And you don't have a fresh cake on hand? Don't panic, as long as you have enough carrots in the house, you'll have a wonderful Sunday cake in 1.5 hours, including cooling time, which you're sure to enjoy for breakfast on Monday. If there are any leftovers at all. 🥕

Juicy carrot cake

  • INGREDIENTS
  • 400 g carrots
  • 1 pinch of salt
  • 1 tsp orange zest
  • 200 g ground almonds
  • 200 g wheat flour (type 405)
  • 2 tsp baking powder
  • 4 eggs (size M)
  • 250 g sugar
  • 100 ml sunflower oil
  • 2 tbsp orange juice
  • some butter for the mould
  • FOR THE ICING & DECORATION
  • 200 g icing sugar
  • 3 tbsp orange juice
  • PREPARATION
  • For the dough, peel and finely grate the carrots, then mix with salt, the grated orange zest, flour, almonds and baking powder. The oven can be preheated to 180°C top/bottom heat (fan oven: 160°C).
  • Separate the eggs, beat the egg whites until stiff and set aside. Mix the egg yolks with the sugar, oil and orange juice. Add the carrot-flour mixture to the egg mixture and stir briefly. Fold the egg whites into the batter. Bake the cake in the preheated oven for about 50 minutes. Let the cake cool completely.
  • For the icing, mix icing sugar with orange juice and pour over the cake. Leave the icing to set for 1-2 minutes, then spread the decoration and press down lightly. Allow the glaze to set completely.

 

What you always wanted to know about carrots!

While our delicious cake is baking in the oven, we have a few fun facts about carrots for you! Did you know, for example, that we eat almost 9000 carrots in our lifetime? Or how heavy the heaviest carrot measured so far was? A whopping 9.5kg!

We think that carrot sounds funniest in Danish, namely: Gulerod! But, even in Germany there are many different names for it, depending on where you live. For example: Wurzel, Möhre, Karotte, Mohrrübe, Gelbe Rübe and maybe you even have your very own name for it! 

We think it's even better that cows that eat a lot of carrots suddenly give pink milk!
