Easter delicious muffins feast
It won't be long now until Easter 🐇🐰🥚. To be precise, it's Easter Sunday on 18 April. We thought after the long Lent, a fruity muffin would put us in a mood. Our muffin is an Easter lemon muffin. Because, as we all know, sour is fun. Fresh and fruity. Super tasty. Quick to prepare, no fuss.
We used our new Easter-themed muffin tins to match. One is a little more floral in rose (pink-green) and the other is a little sweeter and more childish with a cute Easter bunny on a pink background. And to welcome spring, the Daisy muffin tin is also used.
Now you can find out how the recipe for the delicious lemon muffins goes:
- Ingredients (12 pieces)
- 1 lemon, untreated
- 200g flour
- 150g sugar (or sugar alternative)
- 1/2 pkg baking powder
- 1 tsp apple vinegar
- 1 pinch salt
- 100 ml water
- 100g margarine (or neutral oil)
- Glaze
- Icing sugar
- Water
- Accessories: baking cups
- Muffin tins Easter bunny, pink
- Muffin tins rose, pink-green
- Muffin tin daisies, green
- Sturdy baking tin for muffins
- Preparation
- Preheat the oven to 180°C
- First mix all the dry ingredients together.
- Separately, combine all the wet ingredients.
- Now combine the two and mix well.
- Divide the batter between the 12 muffin tins lined in the baking tin.
- Bake in the oven for about 20-25 minutes until golden brown.
- Trick: Prick the batter with a toothpick or wooden stick. As long as something sticks, the dough must still be baked. As soon as nothing sticks, the dough is ready.
- Leave the 12 muffins to cool.
- In the meantime, mix the glaze.
- Mix the icing sugar and water. Add a little lemon juice for flavour.
- Spread the glaze on the cooled muffins and decorate the muffins.
- We also used chocolate cream to make the decorations stick better.
