Oven-Berliner for carnival and fasching

Carnival is coming up soon and how could it be otherwise, yes, that includes pancakes, doughnuts or doughnuts. Not everyone wants to bake or deep-fry them in fat. The question is always, what to do with the excess fat that is no longer needed?

This question doesn't arise when you make pancakes or doughnuts in the oven. We did some research for you and found what we were looking for. There are great recipes for doughnuts from the oven. Okay, actually you could also call them Faschingskrapfen or yeast pastries. Whatever. The important thing is that they taste good and have a great filling!

DThe oven blinis are delicious and vegan too. You could almost say they are a healthy dessert. Less fat, because there's no deep-frying, and no animal ingredients to make your cholesterol skyrocket. So maybe you can eat one more and enjoy.  Yummy! Important, eat the beasties straight on the day they're made, that's when they taste the very best!

Vegan Berlin pancakes from the oven

  • Ingredients for 12-24 Berliner pancakes
  • 150 -300 ml plant milk of your choice
  • ½ to whole cube of yeast or 1 packet of dry yeast
  • 70 g sugar or alternative sweetener, e.g. maple/rice syrup etc.
  • 1 pinch of salt
  • 350 g flour type 550 or type 405
  • 2 tbsp vegan margarine or vegetable oil of choice
  • jam without pieces, according to choice and preference
  • Icing sugar for dusting
  • (lemon zest to refine)
  • Preparation of the dough
  • Warm the plant milk. Then bring the vegetable milk (lukewarm/35-37 °C) to the right temperature with the sugar and yeast, mix everything together and leave it covered in the warm place for a while. About 10 minutes. Indication that it is ready, bubbles form.
  • Now add the flour and the vegetable oil or margarine. Don't forget a pinch of salt. Knead everything well into a smooth dough and now form as many balls as you like and place them on a baking tray lined with baking paper.  Cover the doughnuts and leave them to rise in a warm place for 45-90 minutes. The longer a dough rises, the fluffier it will be. The rising time is therefore important for the result.
  • Shortly before the end of the rising time, preheat the oven to about 180 °C. Bake the oven blinis for about 15-18 minutes. They should turn golden brown.

  • If you like, you can now either make a glaze with the icing sugar or just dust the Berliner Ballen with it.

If you make 24, the filled pancakes will of course be very small. Mini-Berliners, in other words ;-)
