Happy Happy Easter!

🐰 🥚🥚 On 17.4.2022 it's that time again, Easter, the time of the egg hunt and the family. Easter is a celebration for the whole family. Even a typical April day with snow, wind and rain can't slow most children down. There is nothing more exciting than the Easter nest hunt, lovingly hidden in the garden by the Easter Bunny (Dad/Mum) beforehand. 

But Easter also means that the whole family sits together around the coffee table. What could be better than delicious muffins!  One thing is for sure: Easter is a time for baking. Easter bunny, Easter cake. We suggest baking marble muffins, made with chocolate and vanilla. To match, we've come up with some great motifs for you: Easter bunnies, ladybirds and spring flowers.  

Our recipe for vegan mamor muffins

  • Ingredients
  • 350 g flour
  • 150 g sugar
  • 300 ml vegetable milk (oats or rice)
  • 2200 ml neutral vegetable oil 
  • 20 g starch
  • 1 packet baking powder
  • 1 packet vanilla sugar or contents of a vanilla pod
  • 3 tbsp pure cocoa
  • 2 tbsp lemon juice
  • Preparation
  • Preheat the oven to 180 ° Celsius (fan oven).
  • Prepare the mixing bowl: mix all dry ingredients, except cocoa, well with a whisk.
  • Then add all the wet ingredients to the mixing bowl and mix together until a smooth batter is formed.
  • Place muffin tins on muffin baking tray.
  • Now spread half of the batter into the muffin tins. Stir the cocoa into the remaining batter and spread over the light batter. For the marble effect, pull a wooden stick through the batter and form large circles - be careful not to mix too much or the batter will lose its marbling. 
  • Bake the vegan marble muffins in the preheated oven for up to 25 minutes. Test with wooden sticks to see if the batter is cooked through. To do this, insert a wooden stick into the batter and pull it out. If there is no residual batter on the stick, the cake is done. Otherwise, return to the oven for a short time.
